Laissez les bon temps rouler with this fresh Mardi Gras salsa recipe!

Ingredients:

1 1/2 Cups fresh pineapple

1 (15 oz.) can black beans (drained and rinsed)

1 large ripe avocado

3 Tbsp. red onion

1 jalapeno

1/3 cup fresh cilantro

2 Tbsp. fresh lime juice

Salt and pepper to taste

Tortilla chips

Directions:

  1. Chop pineapple, avocado, red onion, jalapeno, and cilantro.
  2. In a bowl, combine freshly chopped produce, black beans, and lime juice. Season with salt and pepper, to taste.
  3. Cover and chill for 30 minutes.

TIP: Freshly made salsa is best served the same day!
