  • Ingredients
    • 1 cup frozen corn
    • 1 can no salt added tomato sauce, not drained
    • 1 can no salt added petite diced tomatoes, not drained
    • 1 (15oz) can low sodium pinto beans, drained and rinsed
    • 1 ( 15oz) can low sodium black beans, drained and rinses
    • 2 cans (10oz each) chicken breast, drained and flaked
    • 2 cups unsalted chicken broth
    • Taco Seasoning
    • 1 ½ Tablespoon chili powder
    • 1 ½ tablespoon cumin
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • ¼ teaspoon oregano
    • 1 teaspoon salt

     

    Optional Ingredients

    • Whole grain crackers
    • Brown rice
    • Shredded cheese
    • Sour cream
    • Avocado
  • Instructions
    1. Rinse and drain beans
    2. Drain and flake canned chicken
    3. Combine chili powder, cumin, onion powder, garlic powder, oregano and salt.
    4. Combine all ingredients into a large soup pot and bring to a boil over medium- high heat. Once boiling reduce heat to a low and let simmer for at least 15 minutes.  Stirring occasionally.
    5. Serve with Whole grain crackers, brown rice, shredded cheese, sour cream, shredded cheese and/or avocado.
